Customizing the styles is easy and there are many settings which is great. I have noticed that most of the sites I have seen like this one for example, have an image as a background for the varius headers. I see where I can change the COLOR but how do I insert a background image?

The new UBBThreads7 is awesome - if somebody could make a tutorial on customizing it would be awesome as well.

Adding a background image is done right in the css. For example, for the gradient in our table headers here I have:

background: #FFFFFF url('http://www.ubbcentral.com/forums/styles/images/ubbthreads/header_grad.gif');

Okay, Great! So you simply add the image URL in the proper format AFTER the background color.
