Is there anyway to shut off the "Show Signature" from being automatically checked off in my forums?

Unfortunately, not without a code hack.

Open ubb_new_topic.cgi and ubb_new_reply.cgi and search both for the comment "# show signature?". You need to delete the "CHECKED" attribute just below each of those.
