Drop forged at a Four Star Elephant Sabatierfactory in Thiers France from Carbon Steel. This piece is a real find. It waslocated in a warehouse owned by a gentleman who was one of the last majorinvestors in the Sabatier factory. When I showed interest in them he told methat they were forged at the turn of the century. Nobody knows exactly how oldthey truly are but my guess would be somewhere in the 20s to the 50s.
The blade measures 10 X 2.25 inches and is not marked. This Blade is an unusually hefty 2/8th inch thick at the bolster, Very nice for a knife of this size, but you know these were ground down wafer thin when they were finished at the factory. So there is plenty of steel here to work with. The overall length of this knife blank is 15.25 inches. Total weight is a whopping 14.25 oz. This blank is straight from the forge, the edge on this blade has not been ground or worked in any way other than being cleaned at some point.

Please note that just like the finished Sabatier Chef’sKnives of this period some of these blanks have slight bends The French refer to the misalignment issue as a“feature” of handmade knives and not a “defect”. I always cherry pick eachblank for straightness before shipping but if one gets by me and you receive onethat has a slight bend it can easily be straightened by holding it with the flatof your hand against a surface and giving it a light tug.
