I'm used to the few hundred spam emails I get per day.

However, a few days ago the number jumped way up and I'm getting about 3,000.

Most are bounces from emails sent from a spoof address coming from my domain name. (see sample below).

Anyone else getting this crap?

Figured out a way to combat this. smile I was accepting all email coming to my domain. I had a handy setting in my host's control panel to discard all unrouted e-mail for my domain out into a cyberspace black hole. Problem solved.

I do have catchall on, but my spam is not way up like yours.

I route all my mail through gmail for automatic archiving and also use it as a spamfilter. It's a pretty good one.

You should configure an SPF record for your domain, then you can set your email client to delete anything that isn't actually valid based off of the SPF record :x

Well, I'm not going to hold his hand, but there are numerous sites on a simple google search; for example:
SPF on WikiPedia (a "what is")
OpenSPF A "what is" and "how to" for SPF
