I've searched the forums and the documentation and can't find this.

Right now the forum title shows the default Powered by UBBthreads.

I put a TITLE tag with a new header in the HTML includes (general display options) and it doesn't seem to override the default.

How do I change this?

Currently you'll need to edit the actual header.tpl file. About the 5th line down you'll see where it sets the page title and adds that bit for the main page.
