Where is the setting for the URL our users are taken to once they are logged out of UBB? We need to change this.

No setting for this in the CP unfortunately. You'd need to edit the logout.inc.php script and change line 90:

$cfrm = make_ubb_url("ubb=cfrm", "", false);
