Not sure if this is a bug or maybe just a settings issue.

Running 7.5.6p2.

I have the time offset in my preferences set so that the times listed on the forum pages all show the correct times in relation to my time zone.

But the times shown in the topics and posts islands are being shown with the server time. Perhaps this is intended.

It could be you are double dipping on your time offset.
Because there are two places to correct your time offset.

One is in your preferences which you already know about.

The other is in the ubb control panel.
Control Panel » Display Options-General -Tab-Date&Time.
Check the Default Time Offset (Hours): field

I went to the control panel to set the time offset. The control panel showed an unadjusted time that was 1 hour off from my server time so I entered an adjustment. I then removed the adjustment from my profile preferences and all is well. Thank you for the tip.

But my server time as checked from the server control panel actually has the correct time. Why is the control panel showing an unadjusted server time as being an hour off?

Would it have anything to do with the server being set to Arizona time which is set to GMT-7 and we don't do DST ever?

daylight savings is a pain in the arse to deal with.
Since it depends on where the server is really located and if the host sets it or not. Or in your case you don't use it all and the host might.

The ubb control panel server time just reads the server and the posts will be based on that time setting.
So I would just set the ubb time offset to be what you want it to be.
Then members outside of your time zone will need to adjust the preferences to their time settings.

Makes sense. The server is hosted in a DST location. Thanks.
