Is there any easy way to hold a NEW person's FIRST posting until it's approved by a Moderator? We'd like to use this as an additional tool to stop SPAMMERS.

yes...

1. set new uses to sign up as 'User' ( default group )
2. set the 'User' group to always be 'moderated' for any posts in all applicable forums
3. create a new group 'Valid Peeps' ( put whatever you want for that name, but you get the drift.
4. set that group to be joined with a certain post count ( ie: if they've made it x posts, they join that group )
5. set 'Valid Peeps' permissions to allow un moderated posting.

Just a caveat to SD's suggestion.
It is the best method to use.
But on a existing board there will be issues with current members
Users is probably your default group and most of your members are in that group.
When you create the new valid peeps un-moderated group.
You need to manually add your good members to that group.
Otherwise.
if say you moderate user group posts, and a user group needs say 10 posts to elevate to valid peeps.
Even if a existing member has 1000 posts they don't get auto promoted to the new group until they post one more time.
Meaning every existing member in the user group will need to be approved on their initial post after you make the change.
Unless you place them in the group firsthand.

BTW, it is a simple process in the member management area to add multiple people to groups.

Why not simply create a New Users group as the moderated posts group and set that as the default?

Like SD stated, whatever floats your boat.
Just bear in mind that the group called users.
Is a default group and can't be deleted.
Meaning not just the current default new user group that can be changed,but one of the default groups that can't be deleted such as admin,global moderator,moderator,users and guest.

You can change permissions,post count,group image in the users group but it is there to stay.

Thinking of this situation.
Creating a new group for new registrations being moderated and
let the users group be the unmoderated group that they auto promote to based on posts may be a smaller impact for existing forums as far as a admin goes. But it is a small issue.

That's what I was missing.

Yep, I understand the USERS group being an issue. I stopped using it years ago. I always ADD all of my "validated" folks to a "members" group.

Thanks. I might look into this as a anti-SPAM process... but of course, in order to make it work, I'll need to have Active Moderators. And YOU KNOW what a pain THAT can be sometimes.
