I guess my version doesn't come with complete details about some of the features. What exactly does archiving do, and why would you do it?

Your version does have the archive feature. You can access the feature via your control panel.

Version is 5.43 (I would suggest upgrading). Anyway, the archive feature will move your posts selected for archiving to a special "archive forum". In the version of UBB you have it becomes a black hole, there is no way to resurrect a post after its been "archived". In the 6 series the archive feature basically moves the posts to a read-only forum, and you can easily un-archive any of the posts in there.
