I'm new at this and can't seem to figure it out... I've found the list of colors under style settings, but can't figure it out beyond that... Help!

After making the color changes in Forum Settings for your various forums you then need to run Update Threads so the UBB will update the html thread files to the new style settings. The Update Threads is found in your control panel in the left-side menu.
