The user emails are contained in the control panel under "Member Management"; their emails only show in the "user list" on the main forum pages when they set a "public email". There is a very large privacy issue here which is why it just doesn't show on the main pages, as spambots can easily read and harvest your user data in which case you'd be responsible for them recieving spam messages...
