The text added to each image in gallery is very small font, not bold and can be barely read or noticed so how can we admins correct that ?

You can control the small text by editing your style and defining an "extra css" as:
#mediumpic_desc {
}
Just insert whatever "text-size= ;" that you wish.

If you want to do the subject line you could also add:

My dog got his chopped; ticked me off cas he's a purebread pomeranian, show dog quality, with extensive lineage...
