In Who's Online it often says a person's location is "Private"... I'm just wondering what, specifically, is considered "Private" -- what could they be doing? (and don't say it's private  )

I believe it is a page that is not recognised by the who's online script.

Subscriptions is one.
Go to My Stuff / Subscriptions then from there go straight to Who's Online. Your location will display as Private (until the Who's Online page refreshes).

What about the gallery for members? I added one tonight, and it seems now an overwhelming # of members are "Private" (altho Guests and Bots (already!) show they're in the gallery no problem...)
