Slowly I'm learning.

How do I show new Categorys? I added 2 new ones but they don't show anywhere

You now need to assign the forums to the catagorys.
Control Panel » Forum Settings » Edit Forum
The Parent field will show catagories and all the other forums.
If you select a catagory it will be in the catagory.
If you select a foum it will become a sub forum
