I'm reading the section on setting file permissions and I'm not sure about one thing. It says for instance that folders such as "images" (or optionally "languages", etc.) should be set to 777, files in this directory to 666, and subdirectories to 777. What about files... in the subdirectories? Do those need to be set to anything?

Yes, those need wide permissions as well, if you need to modify the files from within the control panel. 0666.
