This new 7.3 beta is a breath of fresh air.
I just seen the new e-mail format its neat

And the new e-mail options "Edit Watch List"
Looks neat too.

Liking the tweaks.

If anything getting to that edit your watched list e-mail
options is still to hidden away.

If you use the "My Stuff" Right bar that would be a great
place to say add "Edit E-mail options"
and then list them

Edit e-mails
Watched Members
Watched Topics
Watched Forums

That IMO would be so much easier for new members to get there
head around and then use that option rarther than not
even knowing it exists.
