Well it is simple and not.
You need to understand the settings/group structure to begin with.
You could review the ubbwiki for groups and permissions.
But basicly you would greate a group for those special forums.
Then edit the forum permissions and allow that group to view/post etc.
But then you need to add the member to the group.
