I hear you! It took me a long time to get used to the 6.x after being with 5.x so long, and I worked with it every day! Now I love it <img src="https://www.ubbcentral.com/boards/images/graemlins/smile.gif" alt="" />
Make sure that categories are enabled... You can do that by going to your Control Panel > Display Options > General > Forum Summary Options
You can find color charts for the hex codes all over the net. Here's one that I use often:
