I only have global moderators so I do not need the names displayed under the forum description or at the bottom of the thread list -- Whats the best why to turn that off?

Control Panel -> Display Options -> General -> Forum Summary Options -> Show Forum Moderators. That will turn it off under the fourm description. Turning it off at the bottom of the thread list would take a quick template mod to show(flat|threaded)
