I know that during installation it is easiest to just use an account with owner's rights on the database, but what about after installation?
What is the minimum rights that the database account requires?
It doesn't require CREATE, ALTER, DROP, or GRANT... does it? What about EXECUTE? How about CREATE_TMP_TABLE? And LOCK_TABLES?

It would need alter, create, drop, and delete, we do have an upgrade script that runs with the user info for all upgrades.

And I'm assuming that it needs INSERT, UPDATE, and SELECT as well?
What does it need ALTER, CREATE, and DROP for once you have completed the install?

For future upgrades that add or change things in the database. Most major versions at least add a few new fields, maybe create some new tables, etc. You could potentially leave those permissions off during normal operations and readd them whenever doing an upgrade.
