When uploading a photo you have the option to put a comment with it; can anyone tell me which option I choose to modify the template to change my text colour from white to black?

You need to change the css in the style editor. Go to styles and click edit on Talk_Morgan. Then click on Post Properties and then .subjecttable.

Find

color: #fff;

and replace it with

color: #000;

Then hit the update or add style button.

This will also change subject line on all posts on your site, not just the gallery. But I think that it will look better across the board.
