I think 7.5.6 makes all posts done the 'quick reply' way show up as replies to the original topic post.

In the previous release it would show up as a reply to the last visible post in the thread.

Is there any way to toggle this setting?

Many people have barked about this.
Especially Sirdude.
I believe there has not been a mod posted to change this.
But memory says version 8 will have this corrected.

This is particularly useful when moving a post and all its replies, because if people just use the quick reply option (which a lot of people do!) then subsequent posts are never a reply to the previous one.
