Recently had an admin delete several threads from our forum. Is there a way to restore them?

Generic answer is no!
Detail answer is upload a backup. But then you loose what was posted since then.

I was afraid of that, anyway to go back to our forum stats to restore the original counts?

No, because it sums up the posts and topics from the table that stores the actual data in the forums table.
Well you might be able to edit the forums table. Kinda dangerous. because it might cause other issues.

Do you have the backups? (you should!!!) You can pull individual topics from that if really needed.
