Is there any tools available to show forum trends?
Total threads per day or month over time? Total Posts per day or month over time? Total Users per day or month over time?
For example: I'd love a line or bar chart by month for all time showing the above trends.

Nothing like that currently exists; you'd have to have a set of queries (of which I have a list I've been working on here), but as for making a bar graph with historical data, it could be a pain in the butt, but its possible I suppose

There is one other forum software package that does somewhat what you want that I know of. That have trend reports partially with a bar graph. But at this time UBB is not one of them.
Sounds like Gizmo is already looking into it for a future release.
But even if it was developed today and released. UBB does not keep historical data per say in the current release. Another table would need to be created to store it. And then it would capture that info going forward only.

Everything in the database has a timestamp or can be selected in a range. Run the report based on a desired date set, and data is presented to you. Run it through a count, and you have a total. Process it, and you have a sum. Gizmo has presented an example of this in his link. The data is live data from the moment you click the link, that goes back to day-one of his forum installation, and its presented in a basic report. If you choose to process multiple sets, you could graph or chart it. edit: You could run those queries in a portal box, and have the data refresh once a week, if you dont have anything that will need more frequent updates. The cpu/db time to process those numbers is nothing.

Just to be clear, just like my UBB.SiteMaps, UBB.MemberMaps, UBB.Staff, and other premium modifications, I have no intention of this being a part of the stock package; it's just not a mainstream feature everyone will want, or even want public, plus the development time to throw things together, it just wouldn't add up.
