What do I need to do, and where do I do it, to have our board Moderator receive an email when someones submits a post to the forum they are assigned?

Unfortunately in the current version there isn't an option for this. That has been addressed for version 7.

In a nutshell then we always have to check the board for posts?

Wow! E-mail notification when a post is made to the Moderators seems like a must have item for any forum let alone this software.

You can go to www.threadsdev.net and request this mod, it should be very easy to do.
