Hi. I am about to transfer our site to a new server.
I've gone into admin and selected Content Management > Import/Export and selected all sections for Export (Member Data, Category Data, Forum Data, Message Data). What now? Do I need to FTP this backup data off our web site? If so, where do I find it?
Also, will this back-up remember our style (colour scheme, layout etc)?

Nath,
I've done this multiple times, and even moved my UBB from a Linux box to Windows without any problems. It's not a small board either, 5400 members and about 200,000 threads.

I just tried to do this and got this error under the FYI tab:

Is this becasue of all the hacks I have? And where will it export it to? My server or my hard drive? I would assume somewhere offsite since it is a backup utility.

As I posted before, Import/Export is NOT an effective backup utility. If you are wanting to backup your UBB, you would be better off compressing your cgi-bin and noncgi directories via Shell or FTPing them down.
According to the error you posted, you are missing your /noncgi/importexport directory

If you want to backup your UBB, follow the instructions in the Backup/Transfer guide previously posted.
