Control Panel => General Settings => Display Options => Default Topic View (Days)
Set it there in the control panel. The default only affects new users nad unregistered users. Current users will have to edit their preferences.
Removing the drop-down menu from the intro pages or the preferences requires code modification which is not supported here. Ask at
