Currently if a user selects a signature file it's included in every post. It would be nice to have the abiltiy to turn this off on a per post basis.

I agree... especially as an Admin... it would be nice to turn on or off the "official" signature.

The board I moderate has this ability plus mulitple signatures. It's a hack however but I don't think we've had any problems since they fixed the quote tags glitch.
