Drain, shake & bruise with flour
MAJOR EDIT - My wife has just told me... You should put a roasting tray/ pan into the oven for 15 mins first, so that the oil is hot. This helps give the spuds the 'correct' colour and consistency.

Roast for 1hr 20-30 mins with a clove of garlic....
Even these don't look anyware near as good as my missus does.
